This is a great tasting recipe. It originally called for a caramel drizzle, but I decided that may be too much since the apples are caramelized, so we made some vanilla icing, and cream cheese icing. I will add those recipes to the bottom of this.
3-4LargeGranny Smith ApplesPeeled, cored, and finely chopped
½CupGranulated Sugar
½CupBrown Sugar
1tsp.Ground NutmegOptional
1tsp.Ground Cinnamon
Vanilla Icing
1cupPowdered Sugar
¼cupMilk
1tspVanilla Extract
Cream Cheese Icing
2Tbsp.Butter
2Oz.Cream Cheese
Instructions
Cookie Cups
Preheat oven to 350 degrees F.
In a large mixing bowl, combine butter, 1/2 cup granulated sugar and 1 cup brown sugar. Beat with hand mixer until light and fluffy. Add eggs and vanilla and mix until evenly combined. Add flour, oats, baking powder, cinnamon and salt and stir until just combined.
Spray 2 regular sized muffin tins with cooking spray. Using a medium ice cream scoop, scoop dough into muffin tins, press down with a spoon to create cups. Bake for 15-20 minutes until the cookie cups are golden brown and set. (Don’t worry if the cookie cup centers rise!)
While the cookies are still warm, make the cups. Spray the bottom of a small shot glass with cooking spray and press the shot glass down into the center of each cookie to create cups. Let cool in pan for 15 minutes, then transfer to wire cooling racks.
Apple FIlling
Melt about 2 tablespoons butter in large nonstick skillet over medium-high heat until beginning to brown. Add apples and sauté until beginning to soften. Add the remaining sugars, nutmeg, and cinnamon and cook until desired softness and caramelized.
Spoon the apple filling into the cups. Drizzle with caramel and serve warm or at room temperature.
Vanilla Icing
All these values are approximate. Depends on how thick or runny you want your icings. Mix together powdered sugar, milk, and vanilla till desired consistency and taste. Then split in half.
Cream Cheese Frosting
Take the other half of your vanilla frosting and add the cream cheese and butter to it, and blend till nice and smooth.
Notes
A general note. When I made the recipe, it originally called for 6 apples, and I found that was easily twice what was needed, and I have plenty of apples left over that I'm still using days later. Also, the apple/sugar/brown sugar/cinnamon/nutmeg mixture, I upped a little bit because they amounts they gave also wasn't even for a halved amount. So when making it, use your own taste and discretion.Also, since I was taking this to a party I went to party city and got some little condiment squeeze bottles and added the frosting(s) to them and let people add their own frosting to their dessert.
